Greek Pizza
 
1 12 inch pizza crust
1 cup Thinly sliced zucchini
1/2 cup Pizza sauce
1 cup Chopped cooked chicken breast
5 Sun-dried tomatoes, softened (pour boiling waster over them and soak for 5 minutes) and chopped
3 Extra large pitted black olives, thinly sliced
2 Plum tomatoes (Roma), thinly sliced
1/4 cup Okanagan's Soya Co. Crumbled Feta Cheese
1/2 cup Okanagan's Soya Co. Shredded Mozzarella Cheese

Preparation:

Place zucchini in a small microwave-safe dish with a 1/4 cup water. Cook on high power for 5 minutes. Drain.

Layer toppings on pizza dough in the following order: sauce, chicken, sun-dried tomatoes, olives, onions, zucchini, tomato slices, crumbled Feta, then Mozzarella. Bake at 425°F for 15 minutes, or until cheese is melted and crust is golden brown.

Makes 8 slices.
